From field to mug
The project aims at developing the production of agricultural beer in Puglia, catching the
opportunities arising from a growing market. For this purpose, specific protocols for the production of
agricultural beer will be developed, oriented on the production of a beer with a strong local identity
also thanks to the use of Puglia traditional varieties of cereals, hops from local areas, on-farm
produced yeasts and production processes with a strong focus on quality and differentiation. To
pursue this overall objective, the project will work in parallel on all the levels of the supply chain.
1. Evaluation and recovery of indigenous cereal resources;
2. Optimization of cultivation techniques and agronomic management;
3. Malting of the barley produced in the Apulian territory;
4. Evaluation of the production performance of different varieties of hops;
5. Innovative starter culture design for the production of quality agricultural craft beer;
6. Development of production protocols;
7. Control of microbial contaminants;
8. Study of yeast survival;
9. Evaluation of the use of threshers in bakery products;
10. Evaluation of the environmental and economic impact of the innovations introduced;
11. Market and supply chain analysis.
