A new decision support technology for authentication and geographic traceability of extra virgin olive oil
Enhancement of extra virgin olive oil through the expansion of knowledge in this sector, both in terms of geographical traceability and product characterization through the development and implementation of a strategic tool for the care of the entire production process of the EVO oil up to distribution and hence the need for transparency that guarantees the consumer some fundamental elements such as certainty of origin and high quality standards, being aware that by differentiating themselves from the alternatives available on the market that the actors in the supply chains can find customers willing to pay more.

The culture linked to food is increasingly connected to the concept of healthiness of the products together with evocative values such as the tradition of the territory that identifies them. Each territory, in fact, has geo-mineralogical characteristics well defined and known to researchers; among these, the chemical elements present in the environment and bioavailable in the soil are particularly important. The project, through a series of analyzes on oil, olives and soil samples, aims to identify the nature of the trace elements in the oil and soils in order to build a database and a mathematical model capable of predicting from which territory a certain oil comes.

The innovative protocol on the traceability and geographical characterization of EVO oil was tested in the context of the research project called GeOEVO ""Pilot study of the geographical traceability of EVO oil in the Province of Florence"" funded by the Florence Chamber of Commerce in the 2016-2017 period. by agreement with the DST - UNIFI. This research made use of the geochemical environment of the Tuscan territory, where rocks with specific and contrasting mineralogical and chemical characteristics are represented, and used analyzes of rare earths (REEs) and the isotopic ratio of strontium (87Sr / 86Sr) made in the soil samples, olives and oil produced, defining the link between EVO oil and its ""land of origin"".
These results made it possible to develop an oil characterization procedure, creating an innovative analytical package that olive farms can apply to their business context by making the individual terroir explicit.
