"A new grain" for Apulia cereal production enhancement

Obiettivi
Objectives

The project aims the development of a new food product made from "green wheat" with high
nutritional value, the "freekeh". Therefore, durum wheat lines, rich in micro and macronutrients, with
a low gluten index, and suitable for the cultivation in the Apulia area will be identified. These lines
will be distributed by DiSAAT to the farmer/agriturismi partners, which will provide for the
cultivation, harvesting and processing in order to include the freekeh and its derivatives among the
products served to customers with a superior nutritional characteristics.

Activities

1) Evaluation of durum wheat genotypes with high nutritional value for the production of "green wheat";
2) Organic breeding of genotypes using traditional agricultural techniques;
3) Estimation of the cost of production;
4) Transformation of green wheat: drying, roasting and shelling;
5) Milling and conservation tests;
6) Evaluation of the nutritional properties of freekeh and qualitative tests of the final product;
