Sparkling process for the relaunch of the viticulture in North- Central areas of Puglia region
The project aims at valorising the typical wine products from Centre-North areas of Puglia by testing,
fine-tuning and implementing effective techniques for the obtainment of sparkling wines and lowalcohol drinks (obtained by wine/must), able to valorise the tipicity of the Puglia territory and thus
catching the opportunities offered by a growing demand for them. The project foresees the
reintroduction of native wine varieties as well as the fine-tuning of sustainable viticulture, wine and
sparkling wine production techniques, with positive effects on the biodiversity for the whole area.
1) Implement innovative agronomic techniques
2) Enhance the microbial biodiversity isolated from grapes, musts and wines of the Center-
North Apulian area
3) Create new products in the Apulian wine sector.
4) Evaluation of the suitability of accessions of native vines
5) Construction of new plants with the use of the best accessions in the variety transfer fields
of the partner farms.
6) Evaluation of the environmental impact of the innovations introduced;
7) Evaluation of the economic impact of process and product innovations through profitability
analysis (costs / benefits);
8) Identification of the potential target markets
9) Punctual analysis the relationships between the relative actors.
