Process and marketing innovations for the enhancement of the Apulian artichoke in a sustainable perspective
This project aims to improve the management and the performance of the farms, strengthening the
competitiveness of the artichoke productions through the definition of innovative cultivation systems,
the widening of the varietal diversity, the development of new products with high added value and the
production process most suitable to obtain them, the adoption of a production chain with closed-loop,
the enhancement of the product and the evaluation of the environmental and economic impact of the
proposed innovations.
The activities planned within the project are:
1) Varietal innovation and enhancement of the local artichoke germplasm;
2) Introduction of innovative cultivation systems with low environmental impact for the regional
artichoke supply chain;
3) Post-harvest processing (washing and cutting) of the artichoke for the IV and IV range;
4) Packaging innovations for the development of new products with high added value (IV and V
range);
5) Recovery of crop residues and processing waste to be used for obtaining new products;
6) Environmental impact assessment;
7) Analysis of economic impact and profitability;
8) Market analysis.
