Obiettivi
Objectives

Making organizational innovations to the dairy supply chain through the prototyping of a supply chain for the product Latte Fieno TSG - Traditional Specialities Guaranteed, in order to create economic, social and environmental value for the Apennine areas of the Emilia-Romagna Region. The prototype will concern one or more supply chains (for products such as fresh milk, yoghurt, fresh and seasoned dairy products) by bringing together local production vocations with market opportunities. The main geographical target of the Plan are the rural areas with development problems.

Activities
  • conducting market analysis; 
  • organization of Working Tables; 
  • assessments of production and processing processes and technologies; 
  • carrying out tests to process milk in fresh and seasoned products and panel testing of new products; 
  • realization of the prototype of the Latte Fieno supply chain and the Business Plan of the processing plant; 
  • identification of the aggregative form to network the actors of the supply chain (the Protection Consortium is hypothesized);
  • drafting of documents and reports for the dissemination of the purposes, actions and results of the Plan.

Description

The new Latte Fieno TSG supply chain model can support the redistribution of wealth (mainly among farmers), social equity and healthy diets by focusing on people's work and their place of origin. The supply chain that the Plan will prototype aims to promote production and transformation processes that are sustainable from an economic, environmental and social point of view. The Plan mainly focuses on a prototype of the TSG Latte Fieno supply chain including a traceability system with blockchain, technology, a regulation for the transformation of the TSG Latte Fieno and a Business Plan for a TSG Latte Fieno processing plant. The prototype will describe the value chain and the most direct path from the Emilia-Romagna Apennines to the consumer. Thanks to the prototype the producers will be able to benefit from new market opportunities, with positive repercussions on rural production areas that are typically at a competitive disadvantage. The transformation specification, currently missing in Italy, will be able to benefit the actors of the dairy chain and enhance the TSG Latte Fieno. Finally, the Business Plan will provide a service to already existing companies in the supply chain, which will have a tool to develop their activities and will open up entrepreneurial opportunities to subjects not yet in the market. All activities intend to generate benefits for rural areas with development problems.
