Durum wheat chain: varietal innovation, quality and traceability of Puglia productions
1.Identification of the most productive and suitable durum wheat varieties to be cultivated in the
Apulian areas and able to provide high quality grains for food products with high added value:highprotein pasta (dietetic product according to the"Dietglut®"patent),typical regional
breads;2.Implementation of agricultural practices for a sustainable agriculture and to improve the crop profitability;3.Traceability of durum wheat Apulian productions through innovative methodologies
based on DNA analysis(molecular fingerprinting)and on patented chemical methodologies(Wheat
Tracer®).
The pilot project aims to verify the commercial applicability of new varieties adapted to the Apulian
environments, of wheat, based on the following activities:
1. Varietal innovation: Identification of more productive durum wheat varieties and more suitable for
the Apulian areas;
2. Agronomic innovations: identification of new agronomic techniques that are more sustainable for
the environment and for the profitability of the crop;
3. Traceability innovation: new traceability techniques of Apulian productions with innovative
methodologies based on DNA and patented chemical methodologies (Wheat Tracer®).
