Objectives

The problems to be solved with the FITOCHE project concern:

1) the  reduction  of  fodder  essences,  traditionally  present  in mountain  pasture  meadows,  as  well  as  the  abandonment  of mowing  and  grazing  with  the  progress  of  the  forest;  89/5000; 

2) the land degradation risk;

3) the risk of compromising over time the  "common  consumer  feeling"  that  recognizes  the  mountain
product a superior quality and  genuineness, as well as  a role of soil  protection

Description

The results of the FITOCHE project can be listed as follows:
Document/text accompanied by photos and testimonies about the historical aspects and origins of the partner dairies.
Document on the roles and beneficial aspects of dairy products in human nutrition of various age groups.
Technical-nutritional data sheets (chemical composition and technical characteristics) of the various dairy products involved in the project.
Mapping and analysis of the degradation and conservation of the soil used for the fodder production destined to milk production in the alpine pastures of the partners/conferents of the 5 dairies involved in the project.
Analysis of the floristic composition of the meadows and pastures of the partners/conferents of the 5 dairies involved in the project.
Census of partners/conferents of the 5 dairies involved in the project with description of the agro-zootechnical activities adopted in the area of activity of the 5 partner dairies
Report of the dairy market analysis in order to propose marketing strategies for FITOCHE products to the 5 partner dairies
Organisation of meetings and co-participation activities, integration and synergies with other relevant/interesting PSR projects

Description

The GO of Fitoche (GO-Fitoche) is characterized by the presence of a particularly wide network organization, if not complete in terms of the presence of dairies operating in the Alps of Veneto (from Lessinia (VR), the Asiago plateau (VI), Col di Lana di Livinallongo (BL) to Cansiglio (TV-BL)), to which many institutional and business partners belong. 
It was developed a survey for the collection of historical data, on the 5 dairies involved that have covered the following information and documents:
Statute and/or deed of incorporation.
Mission of the dairy.
Initial site extensions and possible integrations/mergers.
List of dairy presidents and cheesemakers.
List of raw milk products and most significant products.
The dairy's future prospects and objectives.
This information will be available to both farmers and consumers to qualify dairy products and give them added value.

Description

At this stage of the project, the promotional and marketing aspects of dairy products are being addressed, all with the implementation of investments along the dairy chain, encouraging the transfer of scientific knowledge, with the control and development of good breeding and production practices. The FITOCHE logo has therefore been defined, recalling the typical mountain dairy chain. The animals are grazing free to enjoy the landscape and nature of the Dolomites and the Veneto Alps. The cheese is the one that acquires the aromas and sensory characteristics of the richest meadows and pastures in floristic species.
 

Description

In order to assess the floristic richness of meadows and pastures, surveys were carried out in the first year of activity, and will continue this year, using a method that provides for the delimitation of a test area in which the species present are classified and for each one their abundance is reported. 
For the first year of the project, or rather for the first growing season, the survey campaign has been concentrated on grazing areas, involving 3 of the 5 partner dairies of the project, with an elevation from 1000 to 1700 m above sea level. The highest are located in the area referred to Cà Verde Bio, followed by those related to the Pennar Cheese Factory, which in fact show a higher number of species than Agricansiglio.
Other vegetational characteristics, such as the percentage of species subdivided by Graminoids, Leguminosae and Other species, give a general picture of the vegetation that has an impact on the final product. It is normal that the grazing coenosis has Graminoid values between 70 and 90% and that the percentage of Leguminous plants is around 4%. On the other hand, it is very important that the percentage of other species is high because these species include fodder essences that are able to give the milk aromaticity and a characteristic taste.
