Objectives
The main objective of the project is the preparation of a scientific dossier on the knowledge of the biological-nutritional and organoleptic characteristics of the “arrosticino”, in relation to different breeds, age of the animal and the finishing period, aimed at the European certification process of the “arrosticino product d'Abruzzo DOP”, which sensitises companies to undertake or improve the production of sheepmeat in the direction of enhancing the product and the sustainability of the productions and safeguarding the landscape of the mountain pastures
