New analyses and methods to suppport olive oil production and protect the Apulian origin of the EVO
The producers will apply certifiable and sure methods that can attest in a clear and knowable way for both consumers and producers the EVO origin.The origin guarantee will be the result of analytical methods application , based on NMR and NIR and related to business support information systems.
This will assure an higher innovation level and a better qualified producing system of the Apulian olive oil supply chain.
1. the application in the company / mill of an analytical traceability
2. the collection of data on the varietal and territorial (metabolomic) characterization of Apulian oil
within a database in support of the Apulian POs,
3. creation of an IT platform (information system) for processing companies (oil mills) / PO which
allows to link the data relating to the control and verification of oil quality with the territorial and
varietal origin (PO database) .
4. preparation of a certifiable technical / standard line capable of certifying the varietal and territorial
origin of the product; Use of intelligent labeling
