TECHNICAL-ECONOMIC MANAGEMENT ANALYSIS OF THE ENTERPRISES MAKING UP THE PIG SECTOR HEMILIAROMAGNA
The general objective of the GO is to develop innovative tools to analyse and monitor in a timely manner the profitability of the different types of companies that vertically make up the pig supply chains of Emilia-Romagna and to develop an innovative management assistance (benchmarking) tool for companies Pigs oriented to the calculation of the production cost.
Pig farms and pig slaughtering, processing and distribution enterprises Emilia-Romagna participate in several national pig production chains. Among these, the chain of PDO products is predominant and guiding the strategy of most operators. The distinctiveness that the PDO is capable of to give processed meat is fundamental to the profitability of Italian pork production, obtained from a heavy pig whose production costs are necessarily higher than those of a pig light. However, considering that in some years the PDO products have not given satisfaction economic, among some pig companies ğ ĐƌesĐiuto iŶteƌesse peƌ the non-DOP alternative supply chain based on the piglet imports. This trend has created a more diversified production base of pig farms.
